Abstract: This topic discusses micro and macronutrients of carbohydrates, proteins, lipids, fiber and water.  The digestion process is discussed as well as oral conditions affecting nutrient intake.  Understanding of nutrition’s role in oral health, nutritional screening, nutritional assessment and counseling as well as dietary guidelines for Americans is discussed.
